Lebanese Poached Eggs
Poached eggs are a breakfast favourite, but they can seem plain when poached in boiling water. You can make them more interesting by poaching the eggs in a sauce. Here's Lebanese style poached eggs - for a kick in the morning.
Preparation Time: 5 minutes
Cooking Time: 20 minutes
Makes: 1 serving
Ingredients
1 Onion
2 Eggs
5 Cherry tomatoes
1 Tin of chopped/plum tomatoes
1 Tsp of tomato puree
Thyme
1 Tsp mixed herbs
1 Tsp chilli powder
Black pepper
Paprika
Method
Finely chop the onion.
Place in a frying pan with 1tsp of olive oil, all of the seasoning and leave to simmer for 7 minutes.
Thoroughly wash the cherry tomatoes.
Add the tomatoes to the pan, stir and leave to cook on a low heat for 10 minutes, or until golden.
Add the tin of chopped/plum tomatoes, tomato puree and 50ml of water.
Stir and leave without a lid on for 20 minutes.
Crack the eggs, one by one, into the sauce.
Cover with a lid and leave to simmer for 3 minutes.
Remove the lid, serve and enjoy.
