Leek and Potato Soup
A classic combination that's hearty and comforting.

Serves: 4
Ingredients
3 leeks, trimmed
10 baby potatoes
1 brown onion
150ml almond milk
850ml vegetable stock
3 tbsp margarine
1 tsp turmeric
2 tsp chives
Pinch of black pepper
Method
Chop the leeks potatoes, and onion, and fry in margarine for about ten minutes, stirring occasionally.
Add the vegetable stock and almond milk, and simmer for twenty minutes or until the potatoes are soft enough to stick a knife through.
In batches, pour the mixture into a blender and blend until it is a smooth, thick liquid.
Mix the batches back together - stir in the turmeric, chives, and black pepper.
Return to a simmering heat for five minutes.
