Leek and Potato Soup

A classic combination that's hearty and comforting.

Preparation Time: 20 minutes
Cooking Time: 25 minutes
Serves: 4

Ingredients
3 leeks, trimmed
10 baby potatoes
1 brown onion
150ml almond milk
850ml vegetable stock
3 tbsp margarine
1 tsp turmeric
2 tsp chives
Pinch of black pepper

Method
  • Chop the leeks potatoes, and onion, and fry in margarine for about ten minutes, stirring occasionally.

  • Add the vegetable stock and almond milk, and simmer for twenty minutes or until the potatoes are soft enough to stick a knife through.

  • In batches, pour the mixture into a blender and blend until it is a smooth, thick liquid.

  • Mix the batches back together - stir in the turmeric, chives, and black pepper.
  • Return to a simmering heat for five minutes.
