Leek Potato and Cauliflower Soup

This is an excellent soup to keep the winter blues away. It is delicious and will warm you to the core.

Creamy Leek, Potato and Cauliflower Soup


Preparation Time: 10 minutes
Cooking Time: 10 minutes
Serves: 2 persons

Ingredients
1 leek (white part) chopped - makes about 1 cup
2 medium-sized potatoes
2 cups cauliflower stalks
2 garlic cloves
1 tbsp butter or oil
2 tsp salt (or to taste)
Water as necessary (or stock)

For garnish
Black pepper crushed
Feta cheese (optional)

Method
  • I am using a pressure cooker to make this soup just because it is quicker but it can be very easily made in a saucepan.

  • In the pressure cooker, add the butter and spread it around.

  • Mash some garlic and add to the butter along with the leeks. Saute for a bit till fragrant and slightly browned.

  • Add cauliflower and saute. This is a good place to use the cauliflower stalks rather than throwing them into the bin.

  • Add the salt and 2 cups of water. Cook in the pressure cooker for a couple of whistles. If cooking in a saucepan, cook until cooked.

  • Blend it with an immersion blender or blender. Kindly exercise caution while blending hot contents.

  • Adjust water as per your preferred consistency. Add more salt if required. Garnish with pepper and some feta cheese.
