Leek Slice
This slice is somewhere between a fritter and bread, and is incredibly delicious. It's also very healthy, as it's packed with vegetables, herbs and protein.
We cook it in advance for weekday lunches, which we take to work and eat cold on its own. However, the slices would also be tasty warmed up with avocado slices, goats cheese, or a creamy mayonnaise spread over the top.
It will last about 3 - 4 days in the fridge.
Preparation Time: 20 minutes
Cooking Time: 35 - 40 minutes
Makes: 8 slices
Ingredients
3 leeks
1 brown onion
1/2 cup quinoa flakes
1 tsp baking powder
2 eggs
1 tsp turmeric
Handful fresh rosemary
Handful fresh oregano
Olive oil
Salt
Pepper
Method
Preheat oven to 180°C and line a loaf tin with baking paper.
Heat a little olive oil in a non stick frypan. Wash the leeks, then slice them into 1cm rounds. Peel and slice the onion.
Add the leeks and onion to the frypan and cook until soft.
Place in a mixing bowl and add all the other ingredients. Stir well.
Spoon the mixture into the loaf tin and flatten the top with the back of the spoon.
Place in the oven for 25 - 30 minutes, or until the top starts to brown. Leave to cool for at least 10 minutes, then remove from the tin.
Slice and enjoy!
