Leftover Pie
Can't interest your family to eat those leftover vegetables from the night before? Don't throw them out. This recipe will make those veggies tasty again.
It's hard enough to get your kids to eat their vegetables, especially if they're a day old. Now you can combine them to create a delicious tasty pie by adding a couple of simple extra ingredients.
Modifications: The beauty of this dish is that you can add anything you'd like to make your veggies even tastier. Add chicken or bacon or try chili flakes if you enjoy the spice. Other vegetables can also be added.

Preparation Time: 5-10 minutes
Cooking Time: 20-25 minutes
Makes: 4 servings
Ingredients
1 Sheet of Pastry
4 Eggs
1 Pinch of Salt
1 Pinch of Pepper
1 Tablespoon of Olive Oil
2-4 Cups of Leftover Vegetables Chopped
1 Cup of Grated Cheese
Method
First Preheat the Oven to 200 degrees (180 Fan forced)
Top Left going Clockwise Chopped, Brush, Scatter, Crack Sprinkle
Chop up your leftover vegetables to your desired size.
Lightly oil your dish, and place your sheet of pastry, ensuring that the dish is covered. Coat your pastry with oil to make it easier to mould into your dish and to avoid your pastry from drying and cracking.
Place your vegetables on top of the pastry, scattering them however you please.
Crack 4 eggs over the top of your vegetables. Don't worry if the eggs don't look like they cover all your vegetables, the egg whites will spread.
Sprinkle the cheese around your dish.
Put into oven to bake for 20-25 minutes or until egg whites cooked.
Allow to stand for 5 minutes, then serve and enjoy.
And to think they were once leftovers.
