Leftover Roast Chicken Meals

A roast chicken is a great meal maker for the whole family. Once roasted you can use the meat for various dishes. I have created three delicious meals, some of which can be taken to work.



Preparation Time: 10 minutes
Cooking Time: 10 minutes
Makes: 6 servings

Ingredients
1 medium / large roast chicken
Handful of spinach
Black pepper
Half a lime
Half a lemon
2 slices of wholemeal bread
1 beef tomato or 2 tomatoes
1 garlic clove

Method
  • Carve the chicken how you like.



  • I have removed the chicken thighs for a meal I enjoyed earlier in the week.

  • Quick Salad

  • Slice off a chicken breast and place in a tupperware tub.
  • Add whatever sides you like. I have added a bunch of fresh spinach.



  • Coconut Flavoured Lunch

  • Add a tsp of coconut oil to a frying pan.



  • Chop the garlic and add to the frying pan, cook for 2 minutes.



  • Pull the meat off the bones and place in a frying pan along with 1 garlic clove and lemon juice.



  • Cook over a medium heat.

  • Once cooked season with black pepper. This works very well with steamed kale.



  • Quick Sandwich

  • Pull the chicken thighs off the carcass and gently pull the meat apart.

  • Butter one slice of bread and place the pulled chicken on the other slice.



  • Season the chicken with black pepper and a few thyme sprigs.



  • Add the sliced tomato, top with the other slice of bread and place under the grill for 5 minutes.



  • Slice in half and enjoy.
