Leftovers Guacamole

Guacamole is a Mexican dip that has been around since the sixteenth century. The name literally means 'avocado sauce'. Guacamole can be seasoned with a variety of other ingredients, and for this recipe I was inspired by the leftovers that needed using up in my fridge. It is so tasty though, that it is worth buying the ingredients especially.

Although guacamole is traditionally eaten cold, you should try it just after preparation, when it is still warm. Use it to dip anything from nachos and bread to prawns and celery.

Preparation Time: 10 minutes
Cooking Time: 5 minutes
Makes: Approximately 350g

Ingredients
1 avocado
1 ½ tomatoes
½ brown onion
40g celery
80g white mushrooms
2 tbsp raspberry vinegar
¼ tsp salt
½ tsp allspice
½ tsp ground oregano

Method



  • Chop the mushrooms, tomatoes, and onions, and fry them in vinegar for five minutes.



  • Slice the avocado and celery, and season with salt, allspice, and oregano.



  • Put the two mixtures in a food processor, and blend to a chunky or smooth paste (depending on what your prefer).
