Lemon and Broccoli Soup

By virtue of being grounded with an infuriating cold the last few days, my body has been screaming for nutritious, healthy and detox fighting food. I often make Broccoli soup but thought this time around, I would add some lemon juice and zest to give the soup an extra kick of flavour and flu fighting ammunition.

Not only will I be fighting fit in no time, but this very simplified soup recipe follows the principle of paleo nutrition, making it nothing short of super healthy and nutritious but also a great staple to have if trying to watch your waistline.

Lemon and Broccoli Soup is a super healthy way to fight off the winter blues and flu, as well as being a great way to watch your waistline.

Preparation Time: 10 minutes
Cooking Time: 30 minutes
Makes: 4-6 servings

1 Bunch Broccoli
2 Small Potatoes
2 Lemons
1 Teaspoon Lemon Zest
Mushroom Stock Cube
1.5Litres Water
Ground Black Pepper to taste
Chilli to taste

Cut the entire broccoli (head and stems) into small pieces and place into a large saucepan.

Peel and cut the potatoes into small pieces and add to the broccoli.

Cut the broccoli and potatoes and place into a large saucepan along with the mushroom stock, pepper, lemon juice, lemon zest, chilli and water.

Crumble one mushroom stock cube over the vegetables and add the 1.5 litres of water. Depending on the consistency you may want to add additional water to the soup for a thinner style soup.

Add the juice of two lemons and the lemon zest, black pepper and a small amount of chilli to the broccoli.

Bring water and vegetables to the boil then cover with the saucepan lid and simmer for approximately 20 minutes or until all the vegetables are tender.

Simmer the broccoli until tender then puree the soup.

In batches, puree the broccoli then re-heat soup prior to serving.

This soup is delicious eaten warm in winter or cold in summer.

Lemon and Broccoli soup can be enjoyed all year round, eaten hot or cold.
