Lemon Chicken Sweet Potato And Spinach Pasta

Serves: 4
Ingredients
400 g pasta (gluten free if required)
500 ml salted boiling water
1 small sweet potato, cubed
1 tbsp olive oil
1 small onion, diced (exclude for low FODMAP)
2 cloves garlic, finely cut (exclude for low FODMAP)
500 g chicken mince (exclude for vegetarian option)
1 lemon, finely zested and juice
500 g baby spinach
200 ml milk (lactose free, if required)
1 1/4 cups cheese (lactose free, if required)
1 tbsp cornflour
Salt and pepper, to taste
Grated cheese, to serve (lactose free, if required)
Method
Put the pasta in salted boiling water and cook for 1 minute less than the packet instructions. Drain, reserving 1/4 cup of the pasta water and set aside.
Place the sweet potato in a saucepan, cover with water and cook for 4-6 minutes until tender. Drain and set aside.
While the pasta and sweet potato are cooking, fry the garlic in 1 tbsp olive oil in a frypan on medium heat for 1 minute.
Add the onion and sauté for 1-2 minutes until caramelised.
Add the chicken and the lemon zest and stir until the chicken just turns white.
Add the baby spinach and lemon juice and stir for 1 minute, until the spinach wilts.

Add the cooked sweet potato and stir. Turn down the heat to low.

Heat the milk in a saucepan on a medium heat until bubbles just start to form around the edge of the saucepan. Add the corn flour and stir continuously for 2 minutes for the sauce to thicken. Add the cheese and stir until melted. Pour the sauce onto the chicken and spinach mixture and stir to combine.
Add the pasta and reserved pasta water and toss until the pasta is evenly coated.
Season with salt, pepper and sprinkle on grated cheese. Serve immediately.
Tips
Exclude the chicken and use finely chopped mushrooms for a tasty vegetarian option.
To make a moorish pasta bake double the amount of cheese sauce, mix with the pasta and place in a baking dish. Combine grated cheese and the zest of one lemon, sprinkle on top and bake at 180 degrees until the cheese is melted and golden.
