Lemon Chicken Sweet Potato And Spinach Pasta

This quick, zesty pasta is moorish. The lemon, chicken and spinach are a perfect flavoursome match and combined with sweet potato and a cheese sauce is delicious. This versatile pasta can be made into a tasty pasta bake by following the Tip below, vegetarian, low FODMAP, lactose or gluten free.

Preparation Time: 10 minutes
Cooking Time: 15 minutes
Serves: 4

Ingredients
400 g pasta (gluten free if required)
500 ml salted boiling water
1 small sweet potato, cubed
1 tbsp olive oil
1 small onion, diced (exclude for low FODMAP)
2 cloves garlic, finely cut (exclude for low FODMAP)
500 g chicken mince (exclude for vegetarian option)
1 lemon, finely zested and juice
500 g baby spinach
200 ml milk (lactose free, if required)
1 1/4 cups cheese (lactose free, if required)
1 tbsp cornflour
Salt and pepper, to taste
Grated cheese, to serve (lactose free, if required)

Method
  • Put the pasta in salted boiling water and cook for 1 minute less than the packet instructions. Drain, reserving 1/4 cup of the pasta water and set aside.
  • Place the sweet potato in a saucepan, cover with water and cook for 4-6 minutes until tender. Drain and set aside.
  • While the pasta and sweet potato are cooking, fry the garlic in 1 tbsp olive oil in a frypan on medium heat for 1 minute.
  • Add the onion and sauté for 1-2 minutes until caramelised.
  • Add the chicken and the lemon zest and stir until the chicken just turns white.
  • Add the baby spinach and lemon juice and stir for 1 minute, until the spinach wilts.

  • Add the cooked sweet potato and stir. Turn down the heat to low.

  • Heat the milk in a saucepan on a medium heat until bubbles just start to form around the edge of the saucepan. Add the corn flour and stir continuously for 2 minutes for the sauce to thicken. Add the cheese and stir until melted. Pour the sauce onto the chicken and spinach mixture and stir to combine.
  • Add the pasta and reserved pasta water and toss until the pasta is evenly coated.
  • Season with salt, pepper and sprinkle on grated cheese. Serve immediately.
  • Tips
  • Exclude the chicken and use finely chopped mushrooms for a tasty vegetarian option.
  • To make a moorish pasta bake double the amount of cheese sauce, mix with the pasta and place in a baking dish. Combine grated cheese and the zest of one lemon, sprinkle on top and bake at 180 degrees until the cheese is melted and golden.
