Lemon Cinnamon Semolina
Add a bit of zest to your semolina pudding.
Preparation Time: 15 minutes
Cooking Time: 40 minutes
Serves: 3
Ingredients
50 g semolina
50 g currants
15 g butter
500 ml semi skimmed milk
2 tbsp caster sugar
2 tsp cinnamon
1 small lemon
Method
Zest and juice lemon.
Mix the juice with the milk, bring to the boil, and then simmer.
Gradually stir in semolina until it starts to thicken.
Stir in butter, sugar, cinnamon, currants, and lemon zest.
Transfer mixture into an oven proof dish and bake for half an hour.
