Lemon Coconut Protein Bars Gluten Free

These bars are beautifully zesty and wonderfully grainy with a healthy protein punch. Enjoy as a pre-workout snack or along side a pot of tea for a sweet treat that is healthy and wholesome.



Preparation Time: 20 minutes
Cooking Time: 30 minutes
Makes: 12 servings

Ingredients
1 cup protein powder (vanilla or plain)
3/4 cup almond meal
1/2 cup coconut flour
1/2 cup desiccated coconut
3 flax eggs
9 tbsp water
1/4 cup maple syrup
1/2 cup freshly lemon juice (including pulp)
Zest from 1 lemon
2 tablespoons chia seeds

Optional - extra coconut or icing sugar to sprinkle on top.

Method
  • Preheat your oven to 180°C. Grease and line a square baking tin.
  • Prepare the flax egg, this takes 15 minutes to set. Simply mix the flax meal with the water and set aside.

  • In a separate large bowl combine the protein powder with the almond meal, coconut flour and desiccated coconut.
  • Add the maple syrup, lemon juice, zest, and chia seeds to the bowl and mix well. Add in the flax egg mix once set and mix.
  • Pour the lemony dough into the baking tray and smooth out.
  • Bake for 30 minutes, or until skewer inserted in the middle comes out clean.
  • Allow to cool completely in the tin then remove and cut into squares or bars.
