Lemon Coconut Slice
This slice has a wonderfully chewy base and crunchy top. It is deliciously sweet with a refreshing zing, and best of all it's really easy to make. The perfect summer slice.
Preparation Time: 15 minutes
Cooking Time: 25 minutes
Makes: 20 servings
Base Ingredients
3/4 cup castor sugar
125g butter, melted
1 1/2 cups self raising flour, sifted
1 egg, beaten lightly
1/3 cup lemon curd
Topping Ingredients
1 egg white
3/4 cup castor sugar
1 1/2 cups dessicated coconut
Method
Preheat oven to 160 degrees.
Place sugar, butter, flour and egg into a medium bowl,. Mix together until combined and clumping together.
Press mixture into a greased and lined 18x28cm slice tin.
Bake base for 15 - 20 minutes or until lightly golden in colour.
While base is in oven lightly whisk egg white in a smal bowl until slightly frothy.
Add sugar and coconut to the egg white and mix until combined.
Once base is cooked spread lemon curd evenly over the entire surface of the base.
Sprinkle coconut mixture evenly over the top of the lemon curd.
Bake slice again for 10 - 12 minutes or until coconut is lightly browned.
Cool completely in tin then cut into squares to serve.
