Lemon Coconut Slice

This slice has a wonderfully chewy base and crunchy top. It is deliciously sweet with a refreshing zing, and best of all it's really easy to make. The perfect summer slice.

Preparation Time: 15 minutes
Cooking Time: 25 minutes
Makes: 20 servings

Base Ingredients
3/4 cup castor sugar
125g butter, melted
1 1/2 cups self raising flour, sifted
1 egg, beaten lightly
1/3 cup lemon curd

Topping Ingredients
1 egg white
3/4 cup castor sugar
1 1/2 cups dessicated coconut

Method
  • Preheat oven to 160 degrees.

  • Place sugar, butter, flour and egg into a medium bowl,. Mix together until combined and clumping together.




  • Press mixture into a greased and lined 18x28cm slice tin.



  • Bake base for 15 - 20 minutes or until lightly golden in colour.



  • While base is in oven lightly whisk egg white in a smal bowl until slightly frothy.



  • Add sugar and coconut to the egg white and mix until combined.



  • Once base is cooked spread lemon curd evenly over the entire surface of the base.



  • Sprinkle coconut mixture evenly over the top of the lemon curd.



  • Bake slice again for 10 - 12 minutes or until coconut is lightly browned.



  • Cool completely in tin then cut into squares to serve.
