Lemon Curd Syllabub

This is so simple and quick to prepare from store cupboard ingredients.



Preparation Time: 20 minutes
Cooking Time: None
Makes: 4 servings

Ingredients
8 or 10 gingernuts
100ml white wine (I used sparkling because I already had an open bottle.)
250ml double cream
4tbsp icing sugar
120ml lemon curd
Strawberries to garnish

Method
  • Crumble the biscuits. The easiest way is to put them in a polythene bag and bash with a rolling pin.

  • Use the crumbled biscuits to line four serving glasses and moisten with half the wine.



  • Add the sugar to the cream.



  • Whip the cream until it reaches the soft peak stage.



  • Fold in the remainder of the wine, and swirl the lemon curd through the mixture.



  • Pile on top of the crushed gingernuts.



  • Garnish each syllabub with a strawberry.
