Extremely lemony, this classic british cake is fatless, and uses ground almonds to give it and extra nutty flavour. Because it uses so little flour, it will be a good recipe for people with a gluten intolerance. Based on the brands I used, each slice is about 185 calories.

Ingredients
2 lemons
3 large eggs
180g Xylitol sweetener (or caster sugar if you prefer)
30g plain flour
120g ground almonds
1 tsp baking powder
1 tbsp water
2 tbsp lemon juice
2 tbsp icing sugar
Method
Pre-heat the oven to 170 ༠C/ 150 ༠C fan/325 ༠F/3 Gas.
Mix the ground almonds, flour and baking powder.
Beat the eggs and sweetener/sugar together.
Zest and juice the lemons and beat into the eggs.
Fold in the ground almond mixture.
Mix the icing sugar with the lemon juice, and then drizzle over the cake.
