Lemon Lime Tarts
A light, tart, and refreshing treat to pop in your mouth.

Makes: 30 servings
Ingredients
1 lemon
1 lime
2 eggs
165g wholemeal flour
70g margarine
4 tbsp water
2 tbsp Truvia sweetener (or 100g caster sugar)
200g creme fraiche
Method
Zest the lemon and lime.
Rub the margarine into the flour to create breadcrumb consistency.
Add half the zest and water to form a dough.
Roll out the pastry and use a round cookie cutter to cut out the pastry bases.
Place the pastry bases in fairy cake trays and blind bake for 10 minutes.
Reduce the temperature to 110 & #3872 ;C/ 90 & #3872 ;C fan/225 & #3872 ;F/1/4 Gas.
Beat the eggs with sweetener/sugar, then stir in the creme fraiche, lemon and lime juice, and the remaining zest.
Pour the mixture into the pastry cases and bake for half an hour.
