Lemon Lime Tarts

A light, tart, and refreshing treat to pop in your mouth.

Preparation Time: 30 minutes
Cooking Time: 40 minutes
Makes: 30 servings

Ingredients
1 lemon
1 lime
2 eggs
165g wholemeal flour
70g margarine
4 tbsp water
2 tbsp Truvia sweetener (or 100g caster sugar)
200g creme fraiche

Method



  • Zest the lemon and lime.



  • Rub the margarine into the flour to create breadcrumb consistency.



  • Add half the zest and water to form a dough.
  • Pre-heat oven to 200 & #3872 ;C/ 180 & #3872 ;C fan/375 & #3872 ;F/5 Gas.



  • Roll out the pastry and use a round cookie cutter to cut out the pastry bases.



  • Place the pastry bases in fairy cake trays and blind bake for 10 minutes.
  • Reduce the temperature to 110 & #3872 ;C/ 90 & #3872 ;C fan/225 & #3872 ;F/1/4 Gas.
  • Beat the eggs with sweetener/sugar, then stir in the creme fraiche, lemon and lime juice, and the remaining zest.



  • Pour the mixture into the pastry cases and bake for half an hour.
