This is the perfect dessert for when the nights are cold and your family wants a delicious tasting treat. The great thing about a self saucing pudding is the cake top and saucy bottom. I love pudding served with cream or ice cream and this is no exception.
Preparation Time: 10 minutes
Cooking Time: 40 minutes
Serves: 4-6
Ingredients
1 cup SR flour
3/4 cup caster sugar
1 egg
40 g butter, melted
1/2 cup milk
rind and juice of 2 lemons
1 tbs cornflour
1 tbs custard powder
1 3/4 cups boiling water
Method
Preheat oven to 180C and grease a 6 cup capacity ovenproof dish.
Add flour, 1/4 cup sugar, egg, butter, milk and lemon rind to a bowl and stir to combine.
Pour mixture into your prepared dish.
Combine the cornflour, custard powder and 1/2 cup of sugar then sprinkle the combination over the top of the pudding.
Combine the lemon juice with the boiling water and pour it over the top of the pudding.
Bake for 40 minutes until puffed and golden.
Serve hot with ice cream or cream.
