Lemon Self Saucing Pudding

This is the perfect dessert for when the nights are cold and your family wants a delicious tasting treat. The great thing about a self saucing pudding is the cake top and saucy bottom. I love pudding served with cream or ice cream and this is no exception.

Preparation Time: 10 minutes
Cooking Time: 40 minutes
Serves: 4-6

Ingredients
1 cup SR flour
3/4 cup caster sugar
1 egg
40 g butter, melted
1/2 cup milk
rind and juice of 2 lemons
1 tbs cornflour
1 tbs custard powder
1 3/4 cups boiling water


Method
  • Preheat oven to 180C and grease a 6 cup capacity ovenproof dish.
  • Add flour, 1/4 cup sugar, egg, butter, milk and lemon rind to a bowl and stir to combine.
  • Pour mixture into your prepared dish.

  • Combine the cornflour, custard powder and 1/2 cup of sugar then sprinkle the combination over the top of the pudding.
  • Combine the lemon juice with the boiling water and pour it over the top of the pudding.

  • Bake for 40 minutes until puffed and golden.
  • Serve hot with ice cream or cream.
