Lemon Spaghetti with Zucchini and Bacon
Spaghetti doesn't have to be loaded with cream to taste great. This spaghetti with a hint of lemon goes perfectly with the bacon and zucchini, and, if you have a larger family, you can easily double the recipe.

Serves: 2
Ingredients
250 g dried spaghetti
1 tbs olive oil
1 small onion, diced
1 clove garlic, crushed
1 zucchini, diced
100 - 150 g bacon, diced
1 lemon, juiced
parmesan cheese, to taste
salt and pepper, to taste
Method
Cook the spaghetti according to the packet directions.
While the pasta is cooking, heat the oil in a frying pan over medium heat. Add the onions and fry for 4 minutes until the onions have softened.
Add the garlic and fry until fragrant, then add the bacon and zucchini to the pan and cook for 5 minutes.
Once the spaghetti is cooked, drain it and then return it to it's saucepan. Mix the zucchini and bacon mixture through the spaghetti.
Add the lemon juice, a sprinkle of parmesan and salt and pepper. I usually add half the lemon juice and stir it through before adding anymore in case it's an exceptionally bitter lemon.
Serve in a large bowl with a sprinkle of parmesan over the top.
