Lentil and Broccolini Soup

As the weather turns ever so slightly cooler in Australia, thoughts turn to soup. Let it be known I can eat soup all year round but nothing tastes as satisfying slurping on a big bowl of steaming hot vegetable goodness soup on a cold and wintry day.

My mum often makes broccoli soup but I thought I would use broccolini as the star ingredient as I find it slightly sweeter therefore allowing the nutty flavour of the lentils to filter through.

It’s a detox in a bowl.

Preparation Time: 10-mins
Cooking Time: 15-mins
Makes: 4 as an entrée

Ingredients
1 Bunch Broccolini
100g Baby Spinach
½ Sweet Potato
1 Cup of Green Lentils
1 Tablespoon Turmeric
½ Teaspoon Chilli
2L Water
Sea Salt and Black Pepper to taste

Method
  • In a large saucepan combine all the soup ingredients and bring to a boil.

  • Combine all the soup ingredients into a saucepan.


  • Reduce the heat and simmer for 15 minutes.

  • Add approximately 2 litres of water to the soup ingredients, more if you prefer a thinner soup.


  • Remove from heat and allow to cool slightly before putting into a food processor.

  • Puree the soup. I love my soups thick however, if you want a thinner soup add a little more water.

  • Serve hot or warm as required.

  • The soup can be served steaming hot during winter or tastes just as delicious served slightly warm in the warmer months.
