Lentil Barley Tomato Stew
For those cooler nights when you need a warming and satisfying meal to snuggle up to, this Lentil, Barley & Tomato Stew will certainly do the trick!
The lentils and barley make this humble vegan dish super sating, and the onion, capsicum and tomatoes provide a lovely fresh flavour jam-packed with antioxidants and vitamins.
Preparation Time: 5 minutes
Cooking Time: 25 minutes
Makes: 6 servings
Ingredients
1 cup barley
200g dried red lentils
1 tbsp garlic
2 tbsp olive oil
2 brown onions, finely sliced
2 red capsicums, finely sliced
500g cherry tomatoes, roughly chopped
Method
In a medium saucepan, place the barley and 4 cups water, bringing to a boil over a high heat. Reduce to a simmer and leave until just tender. Then drain and rinse with cold water.
Meanwhile, in a large saucepan, place the lentils, 1 litre water and garlic and bring to the boil. Reduce heat and stir, simmering, for 10 minutes. Remove from heat.
Heat the oil in a large saucepan, and saute the onions and capsicums until tender, before adding the tomatoes. Simmer for 10 minutes then add the barley and lentils, mixing well. Season with black pepper if desired.
