Lentil Soup with Chorizo Sausage

Lentil soup with chorizo is a traditional Spanish dish, very tasty and pretty easy to make. I recommend you to give it a try.

Preparation Time: 10 minutes
Cooking Time: 30 minutes
Makes: 4 servings

Ingredients
200 g lentil (soaked 1/2 hour)
50 g chorizo
1 chopped onion
1 big carrot
1/2 bell pepper
Salt and freshly ground pepper
2 bay leaves
1 teaspoon of tomato paste
1 teaspoon of paprika

Method
  • Pour the lentil into a strainer and wash it in cold water and then let it soak for 30 minutes. In the meantime, slice the chorizo and cut the vegetables into small pieces.
  • In a big pot, add the chorizo and fry it for 2 minutes, without any oil, because the sausage releases its own fat and it’s enough to cook the vegetables.

  • Add the vegetables and saute everything for 10 minutes. Season with salt, pepper, tomato paste and paprika. Take the pot off the heat and stir for a few seconds so that the paprika does not burn.

  • Add the lentils, the bay leaves and 3 L of water. Bring the soup to a boil and let it simmer until the vegetables and the lentils are cooked through, approximately 30 minutes.
  • Serve warm along with pickles.
