Lentil Sweet Potato Chilli

Filling, warming, nutritious and meaty. What more could you want from a chilli?

However, this is a vegan chilli, cutting out all the saturated fats of mince, and instead, providing you with the fibre and protein of lentils.



If you aren't ready to make the full vego leap, why not use half lentils and half mince?

Cooking Time: 30 minutes
Makes: 5 servings

Ingredients
1 brown onion
1 tbsp garlic
2 sweet potatoes, cubed
1 can kidney beans, rinsed, drained
2 cans chopped tomatoes
1 can green lentils, rinsed, drained
2 cups vegetable stock
2 tbsp chilli flakes
2 tsp ground cumin

Method
Place the sweet potato in a bowl with 3 tbsp water, and microwave on high for 8 minutes, or until tender and a deep orange. Drain.

  • Once the sweet potato has cooked, throw all ingredients in a large pot, and bring to the boil.

  • Reduce to a simmer, cover, and leave to cook for 20 minutes, or until mixture has thickened and thoroughly cooked through. Serve hot with additional chilli if desired.
