Lettuce, Tuna and Spinach Salad with Balsamic Dressing

You know that the cooking is going to be less messy and super creative when salad is on your menu. There is so much you can do when it comes to salad. The market is full of greens and the best way to get all the health benefits from those are to spin them into a salad or put them into a blender and make a quick green smoothie.

Salads are my favorite and since I do not like using store bought dressing, I keep my dressing recipe really quick and simple.

Preparation Time: 15 minutes
Cooking Time: 15 minutes
Makes: 2-3 servings


1-cup spinach
4-cup lettuce
1/2cup cherry tomatoes, halved
1-cup tuna in oil
1 ripe Hass avocado, cut in 1" pieces
2 tablespoons fresh parsley, chopped
1 tablespoon balsamic vinegar
3 tablespoons olive oil

1. Wash all the greens and let them dry. For tuna, I used canned tuna in oil but you can use fresh tuna as well.

2. Slice avocado, and cut it into small pieces.

3. Mix lettuce, tomato, spinach, parsley and tuna in one bowl.

4. Add salt, pepper and toss them once.

5. For dressing, mix balsamic vinegar and olive oil in a jar and give it a good shake.

6. Toss the dressing in salad and mix it well.

7. Serve the salad alone or with Pearl couscous.
