Light and Delicious Chocolate Cake

This cake is perfect for every occasion. Simple, quick and easy, light and delicious. Lets start.



Preparation Time: 25 minutes
Cooking Time: 17 minutes
Makes: 8 servings

Ingredients
Cake
1 cup flour
2 eggs
1/2 cup caster sugar
1/4 cup milk (room temperature)
100g melted unsalted butter, cooled
1 1/2 tsp baking powder
1 tsp vanilla essence
1 1/2 tbsp cocoa powder
1/4 cup chopped walnuts to sprinkle

Frosting
250g icing sugar(you can add less sugar depending on your taste)
25g melted butter
2 1/2 tbsp black coffee
1 tsp vanilla essence
1/2 tbsp cocoa powder


Method
  • Preheat the oven to 200 °C(fan force).

  • Beat the eggs and caster sugar in a bowl until combined and foamy.

  • Add the dry ingredients(flour, baking powder, cocoa powder) to the egg mixture and use a wooden spoon to stir until combined.

  • Add milk and vanilla essence and mix well.

  • Add the cooled melted butter and mix well. The consistency of the cake mixture should be like pancake mix.

  • Pour the mixture into a 23cm round baking tin(the removable bottom ones) and bake for 17 minutes or until a skewer/toothpick inserted into the centre of the cake comes out clean.

  • Leave in the tin to cool.

  • To make the frosting, melt the butter and cocoa powder in a small non-stick pot over low heat.

  • Add black coffee and vanilla essence and mix well.
  • Add the icing sugar and stir until smooth.

  • Pour the frosting onto the cake. Do this evenly and fast as the frosting turns hard quickly.

  • Sprinkle walnuts before the frosting turns hard.

  • This cake will keep for 5 days in a sealed container. Taste best in the first 2 days as the frosting may soften in the container.
