Lime, Chilli, Cucumber Salad

With the onset of summer, the days are getting longer and hotter however, this Lime, Chilli, Cucumber Salad is a refreshing salad or tapas style dish to serve to family and friends. It’s incredibly easy to make and healthy. It’s the perfect sweet and sour marriage.

Lime, Chilli, Cucumber Salad brings zing to the dinner table.

I use Lebanese cucumbers as they are smaller and have less seeds than continental ones.

Preparation Time: 5 minutes
Cooking Time: 30 minutes (marinating time)
Makes: 2 servings

2 Lebanese cucumbers

1 teaspoon fresh ginger

1 Birds Eye chilli
1/2 teaspoon sugar

1/2 teaspoon salt

¼ cup apple cider vinegar
¼ cup lime juice

Key ingredients for the marinade.

Mix all of the ingredients except the cucumber in a bowl and whisk until the salt and sugar have dissolved.

Mix all ingredients except the cucumber to create the marinade.

Cut the cucumbers into thirds.

Cut the cucumbers.

Add the cucumber to the marinade.

Add enough water to the bowl to submerge the cucumbers completely and place the bowl in the refrigerator to sit for 30 minutes.

Submerge cucumbers completely and allow to marinate for 30-minutes.

Before serving, drain off the liquid, which can be reserved for future salads. Serve cold or at room temperature.

This was amazing! Fresh, clean and bursting with flavour - thanks Annalisa.
Hi Claire, so glad you enjoyed it. Today was scorching in Sydney and would have been the ideal salad to have. I'm going through a greek yoghurt stage at the moment where I garnish everything with natural (unsweetened) greek yoghurt. Next time you try this salad, dollop a small amount of yoghurt for an extra layer of flavour xxx
