Lime Cream Cheese Cake
At last, a cheesecake that is in fact actually a cake. Thin, but dense, this cheese cake uses limes to make a sharp, yet sweet treat. Each slice is about 184 calories based on the brands I used.

Makes: 8 servings
Ingredients
2 limes
1 egg
60g margarine
65g Philadelphia Lightest Cream Cheese
35g Truvia sweetener (or 120g caster sugar)
140g wholemeal flour
150g golden icing sugar
Method
Zest and juice one lime.
Beat margarine, zest, and cream cheese together.
Beat in egg and two tablespoons sweetener (or 100g sugar).
Fold in flour, and then spoon the mixture into a grease cake tin.
Bake in the oven, and then prick holes on the top.
Heat the lime juice in a saucepan, and stir in the remaining sweetener/sugar, until it has dissolved.
Pour the syrup over the cake.
Juice the second lemon, and stir into the icing sugar to create a smooth, thick paste.
Spread the icing sugar over the cake.
