Lime Cream Cheese Cake

At last, a cheesecake that is in fact actually a cake. Thin, but dense, this cheese cake uses limes to make a sharp, yet sweet treat. Each slice is about 184 calories based on the brands I used.

Preparation Time: 40 minutes
Cooking Time: 30 minutes
Makes: 8 servings

Ingredients
2 limes
1 egg
60g margarine
65g Philadelphia Lightest Cream Cheese
35g Truvia sweetener (or 120g caster sugar)
140g wholemeal flour
150g golden icing sugar

Method



  • Pre-heat oven to 180 & #3872 ;C/ 160 & #3872 ;C fan/350 & #3872 ;F/4 Gas.
  • Zest and juice one lime.



  • Beat margarine, zest, and cream cheese together.



  • Beat in egg and two tablespoons sweetener (or 100g sugar).



  • Fold in flour, and then spoon the mixture into a grease cake tin.
  • Bake in the oven, and then prick holes on the top.
  • Heat the lime juice in a saucepan, and stir in the remaining sweetener/sugar, until it has dissolved.



  • Pour the syrup over the cake.



  • Juice the second lemon, and stir into the icing sugar to create a smooth, thick paste.



  • Spread the icing sugar over the cake.
