Lime Jelly Coconut Pearl Pudding

A sugar free, healthy and delicious dessert.



Preparation Time: 2-3 hours
Cooking Time: 10-15 minutes
Makes: 4-8 servings

Ingredients
85g lime jelly powder (no artificial colour and flavour)
1/2 cup pearl tapioca
1 cup light coconut cream
4-5 cups water
4 tbsp honey to serve
4 lime slices to serve



Method

  • In a saucepan, bring 2 cups of water to boil.
  • Turn off heat, pour in jelly powder, stir until dissolved.



  • Divide between serving cups.
  • Set aside to cool down, then refrigerate until jelly firm.



  • Meanwhile, in another saucepan, bring 2 cups of water to boil.
  • Add in 1/2 cup pearl tapioca and boil, stir slowly and constantly, add more water occasionally until all pearls become transparent and the liquid is absorbed.



  • Pour in 1 cup of coconut cream, mix well to combine.
  • Let pearl mixture cool down and refrigerate.



  • When the jelly is firm, divide pearl custard between cups.
  • Top with 1 tbsp honey (less or more or none as per your preference) and a lemon slice per serving cup, let honey infuse in coconut pearl custard. Then serve.
