Lime Jelly Coconut Pearl Pudding
A sugar free, healthy and delicious dessert.
Preparation Time: 2-3 hours
Cooking Time: 10-15 minutes
Makes: 4-8 servings
Ingredients
85g lime jelly powder (no artificial colour and flavour)
1/2 cup pearl tapioca
1 cup light coconut cream
4-5 cups water
4 tbsp honey to serve
4 lime slices to serve
Method
In a saucepan, bring 2 cups of water to boil.
Turn off heat, pour in jelly powder, stir until dissolved.
Divide between serving cups.
Set aside to cool down, then refrigerate until jelly firm.
Meanwhile, in another saucepan, bring 2 cups of water to boil.
Add in 1/2 cup pearl tapioca and boil, stir slowly and constantly, add more water occasionally until all pearls become transparent and the liquid is absorbed.
Pour in 1 cup of coconut cream, mix well to combine.
Let pearl mixture cool down and refrigerate.
When the jelly is firm, divide pearl custard between cups.
Top with 1 tbsp honey (less or more or none as per your preference) and a lemon slice per serving cup, let honey infuse in coconut pearl custard. Then serve.
