Lindt Dark Chocolate Cream Cheese Bread And Butter Pudding

Traditionally bread and butter pudding does not have chocolate in it.

In this recipe I have added both Lindt dark chocolate and cream cheese to give it a different taste.

And it is a VERY different taste -it is not very sweet, but is rich, and delectable.

I used a cheap brand of Raisin toast however next time would use a better one.

Preparation Time: 15 minutes
Cooking Time: 40 minutes
Makes: 8 servings

200 g Lindt 70% chocolate
2½ cups milk
125 g Philadelphia cream cheese, softened
1 tbsp cocoa
1 tbsp sugar
4 eggs
8 slices raisin bread
Cream to serve (optional)

Combine the milk, chopped chocolate, cream cheese, cocoa and sugar in a pan over low heat.


Heat till chocolate is melted, and cheese is broken down, trying to make sure there are no lumps of cheese.

Allow to cool, and then whisk in the eggs.


Cut each bread slice in half diagonally and arrange the triangles in a greased 2 litre shallow baking dish, or Corning Ware.


Pour over the chocolate cheese mixture and stand for 10 minutes.


Bake at around 160° for about 35- 40 minutes or until set.


Allow to cool slightly and sprinkle with icing sugar if desired, before serving with cream or ice cream.


Also nice served at room temperature the next day, and keeps for many days in the fridge.
