Little Lemon Dessert Cakes

Sweet and tangy, these Little Lemon Dessert Cakes are the perfect treat after a long day!

Preparation Time: 10 minutes
Cooking Time: 30 minutes
Makes: 12 servings

3 medium lemons
3/4 cup caster sugar
125g unsalted butter, softened
2 eggs, separated
1 cup self-raising flour
2 tbsp milk

Syrup (optional):
½ cup sugar
¼ cup lemon juice

Preheat oven to 160°C, lightly grease a muffin pan.

Cut one lemon into 2 millimetre thin slices.

Place ¼ cup sugar onto a plate and dip the lemon slices in the sugar to coat.

Place a slice into each hole in the muffin pan.

In a large bowl beat egg whites until soft peaks.

Grate 2 tsp of lemon rind and juice the remaining lemons.

In another bowl, beat together butter, ½ cup sugar and lemon rind until pale and fluffy.

Add in the egg yolks and beat well to combine.

Sift flour over the butter mixture.

Add in 2 tbsp of lemon juice and combine. Add in the milk, stir to combine.

Using a metal spoon, fold the egg whites into the batter.

Divide the mixture among the muffin pan and smooth the tops.

Bake for 20 minutes and stand in the pan for 10 minutes.

Optional Syrup:
Place ½ cup sugar and 1/4 cup lemon juice in saucepan over medium heat, cook for 3-4 minutes or until sugar dissolves.
Bring to the boil and reduce to low heat, allow it to simmer until thick. Spoon over cakes and serve warm.

I made these for my family - they were just delicious along with the syrup- can't believe how easy they were to make and they look quite professional , will definitely be making these again and I've already shared this recipe with one of my friends !
I have just tried to make these,and the recipe says 2 eggs separated,this tells me that the whites and yolks are used or it would have said 2 egg whites,but it does not say to add the yolks.Is this correct or is there a mistake.? I am going ahead with cooking them without the yolks and will see how they turn out.
it does tell you to add the yolks in with the batter later
