Loaded Baked Potato and Cauliflower Mash or Soup
I started off wanting to make a soup in the slow cooker, however, I made a mistake in the amount of liquid I put in, and this then turned out to be a potato and cauliflower mash which I ate with something else.
I was going to make a topping but did not as ran out of time, however I have given the directions for this anyway.
Preparation Time: 15 minutes
Cooking Time: 4 hours
Serves: 6
Ingredients
6 large potatoes, peeled, and cut into cubes
½ cauliflower, cut into florets
1 large onion, chopped
200 g chicken broth - increase to about 500 for soup
3 garlic cloves, crushed
¼ cup butter
2 tsp salt
1 cup cream
1 cup cheese, grated
Chives
For the topping
1 cup sour cream - optional
8 slices bacon, cooked and crumbled
Extra cheese for sprinkling on top
Method
Mix the potatoes, cauliflower, onion, chicken broth, garlic, butter salt and some pepper in a large slow cooker.
Cover and cook on high for about 4 hours, or low for 8 hours.
Mash the mixture until the potatoes are coarsely chopped and the soup is slightly thickened.
Stir in the cream, cheese, and sprinkle chives on top, or mix in.
For the topping
Top with sour cream, sprinkle with the bacon, and the extra cheese.
