Loaded Potato Skins

Make your jacket skins more interesting with a creamy mash filling.

Preparation Time: 20 minutes
Cooking Time: 1 hour 20 minutes
Serves: 3

Ingredients
3 large baking potatoes
2 tbsp butter
100ml double cream
60g cheese
60g lardons
30g spinach
6 slices of sun-dried tomatoes
2 tsp lemon juice
Pinch of black pepper
1 tbsp olive oil

Method
  • Preheat oven to 200 & #3872 ;C/ 180 & #3872 ;C fan/350& #3872 ;F/6 Gas.
  • Pierce the potatoes with a fork.
  • Mix together the pepper and olive oil and rub over the potatoes.
  • Bake for one hour.

  • Steam the spinach and fry the lardons (you can also microwave for 3 minutes), then mix with butter, cream, and lemon juice.
  • Grate cheese and mix in.

  • Once the potatoes have cooled enough to hold, slice in half lengthwise and scoop out the potato, leaving a thin layer attached to the skin.

  • Mix the potato with the other ingredients and then stuff the jacket skins.
  • Place one tomato slice on top of each filling and return to the oven for another fifteen minutes.
