Lotus Root Pork Rib Soup

Lotus Root is a popular ingredient that is commonly found in Chinese & Japanese dishes. It is also known to be a nutritious root vegetable.

One of the popular authentic Cantonese soup is Lotus Root with Pork Rib Soup. The pork ribs compliment the sweetness of the lotus root and that produce a light and refreshing soup. This simple soup stew has the perfect combination of juicy tender pork ribs and crunchy lotus roots.



Preparation Time: 20 minutes
Cooking Time: 60 minutes
Makes: 6 servings

Ingredients
2 sections (about 800g) lotus root, washed off the soil
800g pork ribs, cut into single rib
2 carrots
20 dried pitted red dates
1 tablespoon fish sauce
1 tablespoon scallop floss (optional)
salt, to taste
steamed jasmine rice, to serve

Method
  • Using a vegetable peeler, peel the carrots, trim the ends and cut into chunks.



  • Peel the skin of the lotus roots, trim the ends and cut into 1 cm slices.



  • Blanch the pork ribs in boiling water for 5 minutes. Drain and rinse.



  • In a large stockpot, pour in 2 litres of water. Add in the sliced lotus roots, chopped carrots, blanched pork ribs and red dates.



  • Cover and bring to the boil. Turn the heat to low and simmer for an hour or until the pork is tender.



  • Uncover, mix in the scallop floss, if using. Season with fish sauce and salt.



  • Serve warm with steamed jasmine rice.
