I got the name for this cake from the Marmite tagline. Yes, you heard me, this is a Marmite cake. I concocted the recipe myself when I was feeling experimental. I had no idea how it would turn out, but I was delighted wit the result. It has a lovely buttery texture with an interesting sweet and savoury taste. Te key is not to use too much Marmite. It only uses a tea spoon, but that flavour comes through very clearly, and it not too overpowering.

Makes: 8 servings
Ingredients
175g plain flour
50g soya butter
90g Xylitol sweetener (or caster sugar if you prefer)
3 large eggs
1 tsp molasses
1st Marmite (or any other brand of yeast extract)
Method
Pre-heat the oven to 180 ༠C/ 160 ༠C fan/350 ༠F/4 Gas.
Rub the butter into the flour and 50g of sugar to form a breadcrumb consistency.
Separate the eggs and beat the yolks into the mixture.
Melt 40g of sugar in a saucepan until it turns to caramel.
Mix the caramel, molasses, and marmite together, the stir into the mixture.
Whisk the egg whites to soft peaks and fold in.
