Impress your loved one/ones with this pink love concoction. It is based on the Eastern European dish known as "Borscht" which is traditionally consumed cold and with a boiled egg or potato on the side. I was inspired by the delightful pink color and decided it was calling out for a beetroot love heart decoration.

Love Soup
This is a really fun dish which is healthy and simple to make for special occasions, especially for Valentine's Day, Anniversaries or even Birthdays. Not only does this look amazing, it tastes great too - the lime and spices make it quite a treat.

Raw Beetroot
Preparation Time: 30 minutes
Cooking Time: 20 minutes
Makes: 2 servings
Ingredients
1 large beetroot
2 cups vegetable stock
1 teaspoon ground coriander
1 teaspoon ground cumin
1 lime (juiced)
1 cup sour cream
salt and freshly cracked pepper (to your preferred taste)

Beetroot Garnish
Method
Roughly chop the beetroot and bring the saucepan of vegetable stock and water to the boil. Add the ground coriander and ground cumin spices. Simmer until the beetroots are soft.
Add the lime juice, sour cream, salt and freshly cracked pepper (to your preferred taste).
Serve with a garnish of heart shaped (raw) beetroot. This is easy to do as the flesh is quite crunchy. Just make a thin slice and make a point at one end and the "M" shape at the other to form a super healthy love heart. Now isn't that cute? Let me know how it goes?
