As I can no longer eat all the desserts I love, I now have to think of ones that have little added sugar, and this one was great for just one person. I normally cook for 4 and have the same meal several times, and give one away to a friend.
However, this low fat recipe satisfied my sweet tooth!
Preparation Time: 10 minutes
Cooking Time: 20 minutes
Serves: 1
Ingredients
75 g frozen mixed berries
1 tsp coconut sugar (or brown sugar)
2 tbsp rolled oats
2 tsp honey
4 walnuts, halved and chopped
2 tbsp low fat natural yogurt or cream cheese
Method
Preheat the oven to 200°/180° fan forced.
Mix the frozen berries and coconut sugar in a cup of about 1 cup capacity, or a small dish.
Place this cup on an ovenproof baking tray as it will be far easier to handle on this.
Mix the oats, honey and walnuts in a small bowl.
Spoon this mixture over the berries.
Bake for about 15 minutes, or until the top is starting to go golden.
Serve with yogurt (optional).
