Low Calorie Blueberry Almond Chia Pudding

This is a low fat recipe with just a bit of added sugar in the honey.

Made with unsweetened almond milk, it is great if you are not into very sweet desserts. However if you like things a bit sweeter, buy or make a sweetened almond milk.

I put them in large wine glasses however if you put them in normal sweet dishes, this recipe should be enough for four people.

Preparation Time: 10 minutes plus overnight standing
Cooking Time: No cooking
Serves: 2 - 4

Ingredients
1 cup almond milk
½ cup Greek yogurt
½ cup of blueberries
2 tbsp chia seeds
2 tsp honey
8 almonds, roughly chopped

Method
  • Mix the almond milk and yogurt.

  • Add the blueberries, chia seeds and honey.


  • Put in serving dishes, cover and put in the fridge for several hours or overnight.


  • Just before serving, chop the almonds and add to the pudding.


  • The second night I added mini kiwi fruit and a blueberry as garnish instead of the almonds.


  • Add more honey if you like it a bit sweeter, and remember 4 gm of honey is the equivalent of 1 tsp of sugar. Or else you could substitute a sweet fruit instead of the slightly sour blueberries.
