Low Calorie Chocolate Orange Roll

I need to cut down on sugar, and as I love my cake and dessert, I now have to look for some alternative things to satisfy this craving!

This "cake" helps as it has little added sugar and uses ricotta and natural low fat yoghurt to get it's sweetness.

You can add any fruit you like - berries of any sort would be good but here I have added mandarin slices as I had plenty of those. Also if you do not need to cut down on sugar, you can add more to this recipe to make it a bit sweeter.

Preparation Time: 15 minutes
Cooking Time: 10 minutes
Makes: 8 servings

For the sponge
2 egg whites
2 tbsp castor sugar
2 large eggs
2 tbsp cornflour
1 tbsp cocoa powder
Extra cocoa powder

For the filling
100 g ricotta
1 egg white
100 g yogurt
1 tsp vanilla
1 tsp castor sugar
Zest of 1 orange
Half a mandarin - optional -cut into small pieces

  • Preheat the oven to 200°/180° fan forced.

  • Line a 25 - 30 cm shallow tray with baking paper.

  • To make the sponge, whip the egg whites with a tbsp sugar until stiff peaks form.

  • In a separate bowl, whip the eggs until they are pale and thick - I did this with a stick blender (Bamix).

  • Mix the cornflour and cocoa, and mix this in with the egg mixture. Gently fold the egg whites through this.

  • Spread the mixture onto the tray, and bake for 10 minutes.

  • Allow to cool with a slightly moistened tea towel wrapped over the top.

  • Meanwhile for the filling, beat the ricotta and egg white until smooth. I did this by hand.

  • Add the yogurt, vanilla, sugar and orange zest.

  • Mix until smooth.

  • I also added most of the thinly sliced mandarins at this stage, and kept a few for decoration.

  • Put in the fridge while the sponge cools.

  • To assemble, spread the filling over the cooled cake.

  • Roll up carefully.

  • Add a piece of fruit on the top (optional).

  • Dust with some cocoa, and serve chilled.

  • Great for those on a diet or those wanting dessert with less calories than an ordinary dessert!
