Low Calorie Coconut Chia Breakfast Pudding
This was a delicious breakfast and as I had a bit leftover, I used it as a dessert the next night.
Healthy, and low calorie/fat, this recipe is also easy to make, and requires no cooking.

Serves: 3
Ingredients
For the chia pudding
1 cup coconut milk
½ tsp vanilla extract
¾ tbsp honey
2 tbsp chia seeds
For the middle layer
¼ cup coconut yogurt
200 g Acai frozen
100 g Bananas
1 cup blueberries
1 Medjool date
Method
Put the coconut milk, vanilla extract and honey into a bowl.
Stir in the chia seeds
Pour the mixture into 3 glasses.
Allow the chia pudding to set in the fridge overnight.
Once the chia is set, put the yogurt evenly in each of the glasses, and set aside.
Just before serving, make the acai smoothie layer by putting the banana, blueberries, date and acai pulp into a processor, and processing until smooth -you may need to add a bit of water.
In this instance I did not do this layer as my visitors arrived early, but it would be nicer if I had!
Serve and decorate with blueberries or other fruit.
