Low Calorie Fluffy Pineapple and Banana Mousse
This is such an easy, low fat dessert with no added sugar, and no cooking needed.
It is not sickly sweet and great for those who want to eat healthy!

Serves: 4 - 6
Ingredients
2 ripe bananas
225 g cottage cheese
425 g can pineapple pieces in juice
15 ml gelatine
2 egg whites
Method
Peel and chop one banana and put it in a food processor with the cottage cheese.
Process until smooth.
Drain the pineapple, reserving the juice, and reserve a few pieces for decoration.
Add the rest to the mixture of bananas and process for a few seconds until finely chopped.
Dissolve the gelatine in 60 ml of the reserved pineapple juice.
Stir the gelatine QUICKLY into the fruit mixture.
Quickly whisk the egg whites until they form soft peaks, and fold them lightly into the mixture.
Tip the mousse mixture into a dish, smooth the surface, and chill in the fridge until set.
Decorate the mousse with the reserved banana and pineapple.
