Low Calorie No Pastry Apple Crisp Dessert
This is a slightly different take on an apple pie and has no pastry making it lower in calories than a normal apple pie.
I served it as afternoon tea, however I ate the leftovers as dessert with lashings of thickened cream!

Serves: 6
Ingredients
For the filling
6 Granny Smith apples
3 tbsp coconut sugar
2 tbsp lemon juice
1 tbsp corn flour
½ tsp cinnamon
Bit of salt
For the topping
1½ cups rolled oats
½ cup almond meal
4 - 5 tbsp coconut sugar
1 tsp cinnamon
¼ tsp salt
4 tbsp butter, melted
Method
Cut the core out of the middle of the apple, leaving the apple intact if you are going to use a spiraliser.
I used a spiraliser to cut the apples into long strips, however you could use a potato peeler or if in a hurry, cut thin strips with a knife.
Preheat the oven to 180°/160° fan forced and spray a 20 x 30 glass baking dish with cooking spray.
Add the 3 tbsp coconut sugar, lemon juice, corn flour, cinnamon and salt in a large bowl.
Put the apple mixture into the baking dish, and stir in the melted butter, and mix.
Mix the rolled oats, 4 tbsp coconut sugar, almond meal, 1 tsp cinnamon and a dash of salt in a bowl.
Add this crumble mixture on top of the apples.
Bake until the apples are soft, and the topping is a golden colour.
Let cool for a few minutes before serving with optional thickened cream, and a cup of coffee or tea!
This lasts for ages in the fridge and can easily be heated anytime in the microwave, or it can be eaten cold.
