Low Calorie Tangy Lemon and Orange Cups

I am currently not eating many sweets/desserts due to high sugar levels, however this one has little sugar in it.

I have, however, served it with cream as this just made it delightful! It is tangy, slightly bitter, and the cream adds that "something" to a low calorie dessert! Of course leave it out if you want it totally low fat, however I have little will power.

Preparation Time: 10 minutes
Cooking Time: 10 minutes
Makes: 6 servings

Ingredients
2 cups orange juice, freshly squeezed
½ cup lemon juice, freshly squeezed
Piece of lemon rind
2 tbsp sugar
1/3 cup corn flour
1/3 cup skim milk
½ cup low fat yoghurt
Blueberries (optional), to decorate

Method
  • Put the juices, rind and sugar in a small pot and bring to the boil.


  • Remove from the heat and take out the lemon rind.

  • Mix the corn flour in the milk, and gradually add this to the juices.

  • Return to a medium heat and cook, stirring continuously until the mixture thickens and is boiling.

  • Simmer for about 3 minutes and take off the heat.


  • Put the mixture in a blender, add the yoghurt and puree for 10 seconds only.


  • Pour the mixture into individual serving dishes (or you could put it in one dish), and put in the fridge till they set.


  • Add fruit on top (optional), and some thickened cream - optional but delicious!


  • You can make this the day before and it lasts for many days.
