Low Fat Apricot and Coconut Raw Balls

I am always trying new sweet treats and all have no added sugar, and are therefore far healthier than a bought sweet/biscuit.

These are delicious, cheap to make and are great with that cup of coffee at any time without stacking on the calories!

Preparation Time: 5 minutes
Cooking Time: 0 minutes
Serves: About 20 - 25 balls

Ingredients
1 cup dried apricots (I always buy Angus Park as they are juiciest)
1 - 2 tbsp honey, warmed
¼ cup light coconut cream
25 g butter, melted
½ cup shredded coconut
About ½ cup extra to coat

Method
  • Put the apricots, honey, coconut cream, butter and coconut in a food processor.


  • Process until the mixture forms one big clump or ball.


  • Put the mixture into a bowl, and put in the fridge for about 30 minutes or until it is firm.

  • Using damp hands, roll the mixture into about 20 to 25 balls - I made a few smaller ones foro the grand children.

  • Roll them in the extra coconut, or you could use hundreds and thousands if you have children though these are pure sugar!

  • Put them in a Tupperware or similar, cover and keep in the fridge.
