Fresh figs are currently in season and I picked a whole lot growing wild along a small waterway!
They ripen very quickly so only last at most a week in the fridge so I wanted something I could do with them with ingredients I already had in the fridge.
Although they are expensive here in Western Australia, you only need 3 large ones for this recipe.
Preparation Time: 15 minutes
Cooking Time: 20 minutes
Serves: 3
Ingredients
About 3 large figs - I used 6 small ones
1 cup Greek Yogurt
2 tbsp walnuts
About 3 - 5 tsp honey
Method
Cut the figs up into 6 or whatever you want, and put them on baking paper.

Cut the figs to this size or slightly smaller
Bake them for about 15 minutes till they are oozing!
After 10 minutes, put the walnuts in the oven and roast them for about 5 minutes.
Allow figs and walnuts to cool.
Put some yogurt in a parfait glass or bowl, add the figs and walnuts, drizzle honey (or maple syrup) over this.
Repeat layers till glasses are full.
Put in the fridge and serve with cream or ice cream to be decadent, but I prefer it as a low fat dessert.
