Low Fat Baked Fig and Walnut Parfaits

Fresh figs are currently in season and I picked a whole lot growing wild along a small waterway!

They ripen very quickly so only last at most a week in the fridge so I wanted something I could do with them with ingredients I already had in the fridge.

Although they are expensive here in Western Australia, you only need 3 large ones for this recipe.

Preparation Time: 15 minutes
Cooking Time: 20 minutes
Serves: 3

Ingredients
About 3 large figs - I used 6 small ones
1 cup Greek Yogurt
2 tbsp walnuts
About 3 - 5 tsp honey

Method
  • Cut the figs up into 6 or whatever you want, and put them on baking paper.
  • Cut the figs to this size or slightly smaller


  • Bake them for about 15 minutes till they are oozing!

  • After 10 minutes, put the walnuts in the oven and roast them for about 5 minutes.

  • Allow figs and walnuts to cool.

  • Put some yogurt in a parfait glass or bowl, add the figs and walnuts, drizzle honey (or maple syrup) over this.


  • Repeat layers till glasses are full.


  • Put in the fridge and serve with cream or ice cream to be decadent, but I prefer it as a low fat dessert.
