Low Fat Chicken Scaloppine with a Lemon Glaze
This is an easy recipe, and great if you have to watch calories.
If you like capers, add them as this gives an extra flavour to this meal.
Preparation Time: 20 minutes
Cooking Time: 10 minutes
Serves: 2 - 3
Ingredients
1 large chicken breast, sliced into 2
1 tbsp Dijon mustard
1 small egg
½ cup breadcrumbs
A bit of chicken seasoning
¼ tsp garlic powder
Bit of salt
For the lemon glaze
2 tbsp chicken broth
1 tbsp lemon juice
Bit of salt
2 thin lemon slices
Fresh chives - optional
Capers - optional
Fresh parsley, chopped (optional)
Method
Pound the chicken breasts so they are quite thin.
Mix the mustard and egg together and set aside.
Mix the breadcrumbs with the chicken seasoning, garlic powder and salt and put this on a piece of baking paper.
Dip the chicken breasts in the egg and mustard mixture - shaking off any excess egg, and coat with the breadcrumb mixture, pressing it down.
Heat some olive oil in a frypan and cook the chicken for a few minutes only on each side - cooking it longer makes it dry.
Put on a plate and keep warm while you make the lemon glaze.
For the lemon glaze
In the same pan, add the broth, lemon juice and a bit of salt - if you are using capers, add these also.
Cook this for a minute or two and add in the lemon slices and parsley, if using - mix to combine for another minute.
Pour the glaze over the chicken, add some chives (optional) and serve.
I also served with a salad, and home grown rocket.
