Low Fat Chocolate Oats with Peanut Butter

This is a great brunch recipe which you make the night before.
It is raw, healthy, dairy free, and low fat, as well as being delicious.

If you need a low fat chocolate fix, this recipe is easy to make, and everyone will enjoy this sweet, but healthy treat.

Preparation Time: 15 minutes plus overnight soaking
Cooking Time: 0 minutes
Serves: 1

Ingredients
½ cup rolled oats (I use steel cut)
½ cup unsweetened almond milk
1 tsp maple syrup, or to taste
½ tsp vanilla extract
1 tbsp peanut butter - no added sugar or salt
1½ tbsp 70% dark chocolate
Bit of banana, to serve (optional)

Method
  • Put all the ingredients in a plastic bowl (with a lid) or a glass jar.


  • Stir until it is well combined - I used steel cut oats and they did not go as soft as ordinary rolled oats, and I would therefore use ordinary ones next time.


  • Put the lid on and put in the fridge overnight.

  • Next morning, just before you are ready to serve, stir the oats again - you will probably need to add some more almond milk as the mixture will have gone very thick overnight.

  • Spoon into individual serving dishes, add some sliced banana, and serve.

  • This brunch was delicious as it was not overly sweet having just the one teaspoon of maple syrup, and it was nice and chocolatey rich!
