Low Fat Egg Enchilada Brunch
I have added bacon to this recipe however to keep it low fat, or to keep it vegetarian, omit the bacon.
It is simple to prepare, healthy and tastes delicious.

Serves: 1
Ingredients
1 whole egg
2 egg whites
2 tbsp cheese, grated
1 corn [link http://reviewclue.com.au/old-el-paso-wholegrain-tortillas/ tortilla] or ordinary white flexible tortilla
ΒΌ avocado, sliced
2 tbsp salsa
Bacon, chopped (optional)
Method
If using bacon, fry the chopped bacon until it is browned.
Put a bit of butter in the same pan, and whisk the egg and the egg whites.
Pour into the pan using a medium heat, and cook until lightly scrambled - do not overcook or it will be dry.
Microwave the tortilla for about 15 - 20 seconds or until warm - it is more pliable when warm.
I added the cheese before I did this as I like the cheese slightly melted.
Put the scrambled egg on the side of the tortilla.
Add the bacon, and cheese if you have not melted the cheese, the sliced avocado and the salsa.
Roll up and serve.
You could use just half of the salsa and use the other half for decoration on top of the rolled enchilada.
A very tasty breakfast, brunch, lunch or just a snack!
You could also cut it into bite sized pieces for lunches.
