Low Fat Egg Sandwich

Egg and mayo is one of the most popular sandwich fillings, but unfortunately it also comes with a hefty calorie count due to the high fat content of mayonnaise. I have found a delicious substitute that tastes just as good and is very low in fat and calories, so you can get the best of both worlds. This recipe will provide between one and two servings, depending on how full you like to stuff your sandwich. If you want a smaller portion, simply halve the ingredients.

Preparation Time: 10 minutes
Cooking Time: 10 minutes
Makes: 1 - 2 servings

Ingredients
2 eggs
2 tbsp low fat cream cheese
2 - 3 baby gem lettuce leaves
2 slices whilemeal bread
1/2 tsp dried basil
Salt and pepper to taste

Method
  • Cook the eggs in a saucepan of water by bringing to the boil and then simmering for ten minutes.

  • Blanch the eggs by quickly placing in cold water.

  • Peel off the shells.


  • Slice the eggs and place in a bowl.



  • Stir in the cream cheese, basil, salt, and pepper.

  • Spread the mixture onto one slice of bread, top with lettuce, and the second slice of bread.
