Low Fat Healthy Muffins No Added Sugar
This is the ultimate guilt-free muffin - it has no added sugar, is low in fat, uses wholegrain flour, and tastes just like carrot cake!
Eat them as they are, or top them with a light cream cheese icing for extra special occasions.

Serves: 12 muffins
Ingredients
4 medium-sized ripe bananas
3/4 cup (no added sugar) apple sauce
3 teaspoons vanilla extract
1 1/2 cups of wholemeal self-raising flour
1 teaspoon baking soda
1 teaspoon cinnamon
1/4 teaspoon nutmeg
2 egg whites
Method
Pre-heat the oven to 200 degrees Celsius.
Mash the bananas in a medium bowl.
Add the apple sauce and vanilla extract to the bananas and then combine.
In a large bowl, mix the flour, baking soda, cinnamon, and nutmeg together.
Add the bananas to the flour bowl and combine.
In another medium-sized bowl, beat the egg whites until they form stiff peaks.
Gently fold the egg whites into the muffin mix. The muffin mix will resemble soggy Weet-Bix.
Divide the mixture between the 12 muffin cases. Each muffin case will be approximately half full.
Bake for 10-15 minutes.
Allow to cool for 5 minutes before transferring to a rack to cool completely.
