This is a healthier version of traditional fudge, and a great way to use up bananas past their use by date. They're good for a snack or a dinner party dessert (though you may want to double the recipe for the latter).
Chia seeds boost the "health factor" of this dish, as they are high in dietary fibre, antioxidants, iron, calcium and potassium, contain vitamins A, B, C & E and have a protective benefit against cancer.
I use organic peanut butter, which only contains peanuts. If you use a different variety, the added sugar and/or salt will affect the overall taste (perhaps to your liking).
If you're after something a little sweeter, add a tablespoon of honey to the mix.
