Low Fat Plum and Apple Cobbler
This is not a sweet dessert as I did not use much sugar and it is a low fat Cobbler which is delicious.
I DID add cream and custard to it, but this is of course, optional, if you want really low fat sweets!
Preparation Time: 10 minutes
Cooking Time: 40 minutes
Serves: 4 - 5
Ingredients
825 g tin dark plums in syrup
1 medium apple, sliced
½ tsp orange rind, grated
1 tbsp castor sugar (or use more if you like it sweet)
½ cup self raising flour
¼ cup plain flour
1 - 2 tbsp coconut sugar (or brown sugar)
20 g butter, chopped
1 egg, lightly beaten
2 tbsp milk
¼ tsp ground cinnamon
Method
Drain the plums, and reserve 2 tbsp syrup. Half the plums, remove stones.
Combine the apple, rind, caster sugar and syrup in a pan, and bring to the boil.
Simmer, covered for about 8 minutes, stirring occasionally.
Stir in the plums.
Preheat oven to about 175°/155° fan forced.
Spoon the mixture into a 6 cup ovenproof dish.
Put the flours into a medium bowl, stir in the brown sugar, and rub in the butter.
Stir in the egg and milk, and mix till smooth.
Drop heaped tbsp of the mixture around the edge of the dish, and sprinkle with cinnamon.
Bake uncovered for about 30 minutes or until browned.
This is nice both hot and cold, and I added cream and custard!
