Low Fat Plum and Apple Cobbler

This is not a sweet dessert as I did not use much sugar and it is a low fat Cobbler which is delicious.

I DID add cream and custard to it, but this is of course, optional, if you want really low fat sweets!

Preparation Time: 10 minutes
Cooking Time: 40 minutes
Serves: 4 - 5

Ingredients
825 g tin dark plums in syrup
1 medium apple, sliced
½ tsp orange rind, grated
1 tbsp castor sugar (or use more if you like it sweet)
½ cup self raising flour
¼ cup plain flour
1 - 2 tbsp coconut sugar (or brown sugar)
20 g butter, chopped
1 egg, lightly beaten
2 tbsp milk
¼ tsp ground cinnamon

Method
  • Drain the plums, and reserve 2 tbsp syrup. Half the plums, remove stones.

  • Combine the apple, rind, caster sugar and syrup in a pan, and bring to the boil.

  • Simmer, covered for about 8 minutes, stirring occasionally.

  • Stir in the plums.

  • Preheat oven to about 175°/155° fan forced.

  • Spoon the mixture into a 6 cup ovenproof dish.


  • Put the flours into a medium bowl, stir in the brown sugar, and rub in the butter.

  • Stir in the egg and milk, and mix till smooth.


  • Drop heaped tbsp of the mixture around the edge of the dish, and sprinkle with cinnamon.


  • Bake uncovered for about 30 minutes or until browned.

  • This is nice both hot and cold, and I added cream and custard!
