Low Fat Turkey and Greens
Turkey is generally regarded as the underdog compared to chicken, but lets throw out draconian beliefs and make turkey the champion with this low fat, well-flavoured meal.
Preparation Time: 1 hour 30 minutes
Cooking Time: 30 minutes
Makes: 2 servings
Ingredients
150g turkey thigh
3 garlic cloves
Olive oil
Black pepper
Level tsp/2 sprigs rosemary
Level tsp/3 sprigs Thyme
1 tsp butter
1 leek
1/4 summer cabbage
Method
Place all the seasoning in a bowl and crush the garlic using a pestle.
Pour the seasoning over the meat and add the olive oil.
Let the meat infuse with the seasoning for at least an hour.
Place the turkey into a frying pan and cook on a medium heat for 5 minutes.
After 5 minutes turn the heat up ensuring the meat is browned all over for a further 5 minutes.
Add half a pint of water, a pinch of salt, and cover with a lid for 15 minutes to tenderise.
Boil a pint of water in a saucepan and add the cabbage and leeks. Boil the vegetables for 8 minutes.
Remove the lid from the frying pan, the meat should be tender and browned.
Drain the vegetables using a colander, toss in the butter and black pepper.
Finally add the turkey and enjoy.
